The winemakers were curious about the potential of the local native Mammolo grape for creating a sparkling wine. The result is a surprisingly delightful and complex wine, and it was given the evocative name "Baciami" (Kiss Me).
Type: Brut sparkling wine, Charmat method.
Grape Variety: 100% Mammolo, a native grapevine/variety of Renaissance Tuscany.
Origin: The hills of the Chianti DOCG production area, a few kilometers from Florence, Tuscany, Italy.
Aging: Stainless steel.
Alcohol: 11%.
Tasting Notes: Pale pink color reminiscent of elegant Provençal nectars. The perlage is intense and persistent. The nose has clear notes of raspberry, blackberry and black currant, and a subtle citrus flavor interspersed with light and pleasant mineral notes. In the mouth it is delicately exuberant; fruit-forward but fresh and crisp at the same time.
Food Pairing: Complements many foods; try it with appetizers and crudités, spring vegetables, carpaccio, seafood, fish, soups, other white meats, and/or fried foods.
Serving temperature: 8 to 10 °C (or up to 12 °C because it is a single-vintage wine).
