Bixio Corvina IGT Verona 2018

Made with the same appassimento process as Amarone, Bixio Corvina is like a little brother of Bixio's "Bronze" Amarone. It's a unique wine because the Corvina grape is rarely made into wine on its own. Why? Because most of what is grown is used for making Amarone. A few wineries, like Bixio, strongly believe in the grape and its ability to shine on its own.

This Corvina is authentic. You get what you pay for. A cheaper process, used by some to make "cheap and cheerful" wine, leads to more acidity and a lighter wine. But Bixio Corvina has been made using the traditional, patient, authentic process, leading to a big, bold, beautiful wine.

Grape Varieties: 100% Corvina.

Origin: Bixio’s own vineyards in the Valpolicella region, at 80 m above sea level.

Aging: After a drying process following the traditional technique, the wine is fermented in oak barrels. Part of the wine is refined for 6 months in large cherry barrels.

Alcohol: 14%.

Tasting Notes: Intense and deep ruby red. Aromas of red fruits with grassy and spicy notes. Dry, warm, intense, and enveloping on the palate; fruity with notes of cherry, plum, and spices.

Food Pairing: Recommended with roasted meat, grilled meat, and game, as well as bruschetta and pizza or pasta with tomato-based sauce.

Serving Temperature: 18° to 20°C (room temperature or a bit lower).
